Chicken Caesar Salad

Ingredients - You will need...

  • 2x Skinless Chicken Breast
  • 1 large cos lettuce
  • Olive oil
  • Shaved parmesan
  • Caesar dressing


1. Preheat oven to 180'C.Tear the bread into big croutons and spread over a large baking tray, then sprinkle over 2 tbsp olive oil. Rub the oil into the bread and season with a little salt if you like. Bake for 8-10 mins, turning the croutons a few times during cooking so they brown evenly.

3. Rub chicken breasts with oil and season. Place chicken in a hot pan for 4 mins before then turning it and leaving it for 4 mins more. Ensure the juices run clear.

4. Place the lettuce in a large bowl, add the chicken and croutons and lightly drizzle on your caesar dressing. Sprinkle shavings of parmesan and serve.

It really is as simple (and tasty) as that :)
